Hamstrings bend your knee and also work with your glutials to straighten your back. They can be thought of as the biceps of the leg.
Hamstrings are used in running, jumping and any activity that involves moving your legs. In order to pick your foot off of the ground and put it in front of you, you must contract your hamstrings.
